How To Make Potato Cakes with Smoked Salmon & Cream Cheese

Ingredients
- 4 medium potatoes, peeled and grated
- 1 small onion, grated
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons vegetable oil
- 8 slices smoked salmon
- 4 tablespoons cream cheese
- Fresh dill, for garnish
Instructions

In a large bowl, combine the grated potatoes, grated onion, flour, salt, and black pepper. Mix well until all ingredients are combined.

Heat 2 tablespoons of oil in a large non-stick skillet over medium heat.

Take about 1/4 cup of the potato mixture and flatten it into a pancake shape. Place it in the heated skillet and press it down with a spatula. Cook for about 4-5 minutes on each side or until golden brown and crispy. Repeat with the remaining potato mixture, adding more oil as needed.

Once all the potato cakes are cooked, place them on a paper towel-lined plate to drain any excess oil.

To serve, top each potato cake with a slice of smoked salmon and a dollop of cream cheese. Garnish with fresh dill.
