Ingredients
- 5 oz tuna in water, drained
- 5 oz cucumber, sliced
- ½ cup yogurt, or sour cream, thick
- ½ cup mayonnaise, divided
- 1 tbsp lemon juice
- 2 tbsp red onions, minced
- 2 tbsp parsley, chopped
- 4 slices loaf bread
- salt and ground black pepper, to taste
Instructions
- In a mixing bowl, add drained tuna, yogurt or sour cream, half of your mayonnaise, lemon juice, red onions, and parsley.
- Season with salt and pepper, then mix until evenly combined. Adjust seasoning to taste and set aside.
- Assemble your sandwich. Spread roughly 1 tablespoon of mayonnaise on both sides of the bread.
- Place roughly 6 cucumber slices per bread.
- Spread roughly 2 tablespoons of tuna filling per sliced bread, followed by 6 more cucumber slices. Cover with the other sliced bread.
- Trim the crusts off your loaf bread slice
- Either slice these into halves or triangles. Serve.
