  • 4 cups of fresh baby spinach
  • 1 ripe avocado, pitted and sliced
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup of crumbled feta cheese
  • 2 tbsp of extra virgin olive oil
  • 1 tbsp of balsamic vinegar
  • Salt and freshly ground black pepper, to taste


  1. Wash and dry the spinach leaves and place them in a large salad bowl.

  2. Add the sliced avocado, cherry tomatoes, and red onion to the bowl.

  3. In a small bowl, whisk the olive oil, balsamic vinegar, salt, and pepper together to make the dressing.

  4. Drizzle the dressing over the salad and toss to combine.

  5. Sprinkle the crumbled feta cheese on top.

  6. Serve and enjoy!
