Ingredients

  • 4 cups of mixed greens
  • 2 cups of spinach
  • 1 cup of chopped strawberries
  • 1 cup of blueberries
  • 1 avocado, sliced
  • 1/2 cup of edamame beans
  • 1/4 cup of pumpkin seeds
  • 1/4 cup of sunflower seeds
  • 1/4 cup of sliced almonds
  • 1/2 cup of balsamic vinaigrette

Instructions

  1. Wash and dry mixed greens and spinach, place them in a large bowl.

  2. Add chopped strawberries, blueberries, sliced avocado, and edamame beans.

  3. In a small pan, toast pumpkin seeds, sunflower seeds, and sliced almonds until lightly golden.

  4. Add the toasted seeds to the salad.

  5. Toss the salad with balsamic vinaigrette and serve.
