Ingredients

  • 6 cups spinach leaves, washed and dried
  • 1 cup walnut halves
  • 1/2 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, sliced
  • 3 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp dijon mustard
  • 1/4 cup olive oil
  • salt and black pepper, to taste

Instructions

  1. In a large bowl, combine spinach, walnuts, feta, dried cranberries, and red onion.

  2. In a small bowl, whisk together apple cider vinegar, honey, dijon mustard, olive oil, salt, and black pepper.

  3. Drizzle dressing over the salad and toss to combine.
