Ingredients
- 4 cups of fresh baby spinach
- 1 ripe avocado, pitted and sliced
- 1/2 cup of cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup of crumbled feta cheese
- 2 tbsp of extra virgin olive oil
- 1 tbsp of balsamic vinegar
- Salt and freshly ground black pepper, to taste
Instructions

Wash and dry the spinach leaves and place them in a large salad bowl.

Add the sliced avocado, cherry tomatoes, and red onion to the bowl.

In a small bowl, whisk the olive oil, balsamic vinegar, salt, and pepper together to make the dressing.

Drizzle the dressing over the salad and toss to combine.
