Refreshing Corn, Black Bean and Cucumber Salad Recipe
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp fresh cilantro
- 1 lime
- 15 oz black beans drained
- 8.75 oz sweet corn drained
- 2 large cucumbers diced
In a small mixing bowl, combine balsamic vinegar, olive oil, salt, pepper, cilantro and juice from lime.
In a medium bowl, add black beans, corn and cucumbers.
Cover and refrigerate for at least 4 hours. Serve cold.
