Refreshing Corn, Black Bean and Cucumber Salad Recipe

  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp fresh cilantro
  • 1 lime
  • 15 oz black beans drained
  • 8.75 oz sweet corn drained
  • 2 large cucumbers diced


  1. In a small mixing bowl, combine balsamic vinegar, olive oil, salt, pepper, cilantro and juice from lime.

  2. In a medium bowl, add black beans, corn and cucumbers. 

  3. Cover and refrigerate for at least 4 hours. Serve cold.
