How To Make Refreshing Corn, Black Bean and Cucumber Salad

Ingredients
- ¼ cup balsamic vinegar
- 2 tbsp olive oil
- salt and ground black pepper, to taste
- 3 tbsp cilantro, fresh, chopped
- lime juice, (from 1 lime)
- 15 oz black beans, canned, drained
- 8¼ oz sweet corn, kernels, canned, drained
- 2 cucumbers, (roughly 14 oz total), large, deseeded and diced
- ½ cup cherry tomatoes, halved
To serve:
- 1½ oz tortilla chips, crumbled
- 1½ tbsp pepper jack cheese, or any Mexican cheese of your choice, grated
Instructions
- In a small mixing bowl, combine balsamic vinegar, olive oil, cilantro, and juice from lime.
- In a medium bowl, add black beans, corn and cucumbers.
- Combine both mixed vegetables and dressing.
- Adjust seasoning to taste with salt and ground black pepper.
- Serve cold, garnished with tortilla chips and grated cheese.
