How To Make Refreshing Corn, Black Bean and Cucumber Salad
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp fresh cilantro
- 1 lime
- 15 oz black beans (drained)
- 8.75 oz sweet corn (drained)
- 2 large cucumbers (diced)
- In a small mixing bowl, combine balsamic vinegar, olive oil, salt, pepper, cilantro and juice from lime.
- In a medium bowl, add black beans, corn and cucumbers.
- Cover and refrigerate for at least 4 hours. Serve cold.

- ½ cup cherry tomatoes, halved
To serve:
- Crumbled tortilla chips, roughly ¼ cup
- Grated Mexican cheese of your choice, roughly ¼ cup
Instructions
- In a small mixing bowl, combine balsamic vinegar, olive oil, cilantro and juice from lime.
- In a medium bowl, add black beans, corn and cucumbers.
- Combine both mixed vegetables & dressing.
- Cover and refrigerate for at least 2 hours to marinate.
- When ready, adjust seasoning to taste with salt & ground black pepper
