How To Make Refreshing Corn, Black Bean and Cucumber Salad

  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp fresh cilantro
  • 1 lime
  • 15 oz black beans (drained)
  • 8.75 oz sweet corn (drained)
  • 2 large cucumbers (diced)
  1. In a small mixing bowl, combine balsamic vinegar, olive oil, salt, pepper, cilantro and juice from lime.
  2. In a medium bowl, add black beans, corn and cucumbers.
  3. Cover and refrigerate for at least 4 hours. Serve cold.

Ingredients

  • ¼ cup balsamic vinegar
  • 2 tbsp olive oil
  • Salt & ground black pepper to taste
  • 3 tbsp fresh cilantro chopped
  • Juice from 1 lime
  • 15 oz canned black beans drained
  • oz canned sweet corn kernels drained
  • 2 large cucumbers roughly 14 oz total, deseeded & diced
  • ½ cup cherry tomatoes halved

To serve:

  • Crumbled tortilla chips roughly ¼ cup
  • Grated Mexican cheese of your choice roughly ¼ cup

Instructions

  1. In a small mixing bowl, combine balsamic vinegar, olive oil, cilantro and juice from lime.
  2. In a medium bowl, add black beans, corn and cucumbers.
  3. Combine both mixed vegetables & dressing.
  4. Cover and refrigerate for at least 2 hours to marinate.
  5. When ready, adjust seasoning to taste with salt & ground black pepper
  6. Garnish with crumbled tortilla chips & grated cheese. Serve cold
