This refreshing mango salad has avocados, juicy cherry tomatoes, and fresh greens. You can serve with beans or chicken for a full meal.

  • 2avocados,cut into cubes
  • 20cherry tomatoes,halved
  • 1mango,cubed
  • 2cupsmixed salad greens
  • 2cupsromaine lettuce,bite-size pieces
  • ½red onion,chopped
  • 3green onions,chopped
  • 4limes,juiced
  • 2tbspolive oil
  • 1tbspwhite sugar
  • ¼tspred pepper,ground
  • ¼tspcumin,ground
  • ¼tspsalt
  • ¼tspblack pepper,ground


  1. Combine avocados, tomatoes, mango, mixed greens, romaine lettuce, red onion, and green onions in a bowl. Toss salad until evenly mixed.

  2. Combine lime juice, olive oil, sugar, red pepper, cumin, salt, and black pepper in a separate bowl. Whisk dressing until blended. Pour into the salad; toss briefly and serve.
