Ingredients

  • 2 chicken breasts, sliced
  • 4 slices of pineapple
  • 4 cups of mixed salad greens
  • 1 cucumber, thinly sliced
  • 1/4 cup of fresh mint leaves
  • 1/4 cup of fresh cilantro leaves
  • 1/4 cup of roasted peanuts
  • Nam Jim dressing:
  • 2 cloves of garlic, minced
  • 2 Thai chili peppers, minced
  • 2 tablespoons of fish sauce
  • 2 tablespoons of lime juice
  • 1 tablespoon of brown sugar

Instructions

  1. Preheat a griddle pan or grill over medium-high heat.

  2. In a small bowl, combine garlic, chili peppers, fish sauce, lime juice, and brown sugar to make the Nam Jim dressing. Set aside.

  3. Grill the pineapple slices for 2-3 minutes on each side until lightly caramelized. Set aside.

  4. Season the chicken breasts with salt and pepper, then grill for 4-5 minutes per side until cooked through. Set aside to rest.

  5. In a large mixing bowl, combine the salad greens, cucumber slices, mint leaves, cilantro leaves, and peanuts. Toss with the Nam Jim dressing.

  6. Slice the grilled chicken and pineapple into bite-sized pieces.

  7. Divide the salad mixture onto serving plates and top with sliced chicken and grilled pineapple.

  8. Serve immediately and enjoy!
