How To Make Griddled Pineapple & Chicken Salad with Nam Jim Dressing

Ingredients
- 2 chicken breasts, sliced
- 4 slices of pineapple
- 4 cups of mixed salad greens
- 1 cucumber, thinly sliced
- 1/4 cup of fresh mint leaves
- 1/4 cup of fresh cilantro leaves
- 1/4 cup of roasted peanuts
- Nam Jim dressing:
- 2 cloves of garlic, minced
- 2 Thai chili peppers, minced
- 2 tablespoons of fish sauce
- 2 tablespoons of lime juice
- 1 tablespoon of brown sugar
Instructions

Preheat a griddle pan or grill over medium-high heat.

In a small bowl, combine garlic, chili peppers, fish sauce, lime juice, and brown sugar to make the Nam Jim dressing. Set aside.

Grill the pineapple slices for 2-3 minutes on each side until lightly caramelized. Set aside.

Season the chicken breasts with salt and pepper, then grill for 4-5 minutes per side until cooked through. Set aside to rest.

In a large mixing bowl, combine the salad greens, cucumber slices, mint leaves, cilantro leaves, and peanuts. Toss with the Nam Jim dressing.

Slice the grilled chicken and pineapple into bite-sized pieces.

Divide the salad mixture onto serving plates and top with sliced chicken and grilled pineapple.
