How To Make Kale Caesar Salad

This kale Caesar salad is tossed in heaps of greens and croutons, dressed in Greek yogurt, lime juice, and Parmesan cheese.

For Kale Caesar Salad:

  • 4cupsfresh kale,chopped
  • 4cupsRomaine lettuce,chopped
  • 2cupscroutons,instructions below
  • ¾cupParmesan cheese,grated
  • 1cupcherry or grape tomatoes,halved, optional

For Lime Caesar Dressing:

  • ½cupplain Greek yogurt
  • ½cupParmesan cheese
  • 4tbspfresh lime juice
  • 1tbspextra-virgin olive oil
  • 1-2tspanchovy paste,to taste
  • 2tspWorcestershire sauce
  • 1clovegarlic,pressed or finely minced
  • 1tspDijon mustard
  • ¼tspsea salt
  • pinch of black pepper
  • 4tbspmilk


Kale Caesar Salad:

  1. Add the kale, Romaine, croutons, Parmesan, dressing, and tomatoes to a large bowl.  Toss until combined.

  2. Serve immediately.

Lime Caesar Dressing:

  1. Add all ingredients except milk to a small mixing bowl, and whisk together until combined and smooth.  

  2. Whisk in a tablespoon of milk at a time until the dressing reaches your desired consistency.

  3. Use immediately, or refrigerate in a sealed container for up to 3 days.
