For Kale Caesar Salad:
- 4cupsfresh kale,chopped
- 4cupsRomaine lettuce,chopped
- 2cupscroutons,instructions below
- ¾cupParmesan cheese,grated
- 1cupcherry or grape tomatoes,halved, optional
For Lime Caesar Dressing:
- ½cupplain Greek yogurt
- ½cupParmesan cheese
- 4tbspfresh lime juice
- 1tbspextra-virgin olive oil
- 1-2tspanchovy paste,to taste
- 2tspWorcestershire sauce
- 1clovegarlic,pressed or finely minced
- 1tspDijon mustard
- ¼tspsea salt
- pinch of black pepper
- 4tbspmilk
Instructions
Kale Caesar Salad:

Add the kale, Romaine, croutons, Parmesan, dressing, and tomatoes to a large bowl. Â Toss until combined.

Serve immediately.
Lime Caesar Dressing:

Add all ingredients except milk to a small mixing bowl, and whisk together until combined and smooth. Â

Whisk in a tablespoon of milk at a time until the dressing reaches your desired consistency.

Use immediately, or refrigerate in a sealed container for up to 3 days.
