Ingredients
- 2 duck breasts
- 2 tbsp honey
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 4 cups mixed salad greens
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint leaves
- 1/4 cup chopped roasted peanuts
Instructions

Score the duck skin and season with salt and pepper. Cook the duck breasts in a hot skillet over medium-high heat, skin side down, until crispy and golden brown, about 6-8 minutes. Flip and cook for another 4-6 minutes for medium-rare. Let the duck breasts rest for 5 minutes before slicing.

In a small bowl, whisk together the honey, soy sauce, rice vinegar, and sesame oil to make the dressing.

In a large bowl, combine the salad greens, cucumber, carrot, cilantro, and mint leaves. Toss with the dressing until well coated.

Slice the duck breasts and arrange on top of the salad. Sprinkle with roasted peanuts.
