How To Make Chinese Roast Duck

Preparation: 20 minutes
Cooking: 2 hours
Total: 2 hours and 20 minutes

Serves:

Ingredients

  • 1 whole duck (about 4-5 pounds)
  • 2 tablespoons of Chinese five-spice powder
  • 2 tablespoons of salt
  • 1 tablespoon of honey
  • 1 tablespoon of soy sauce
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of ginger, minced
  • 1 tablespoon of garlic, minced
  • Spring onions for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Rinse the duck and pat it dry. Remove any excess fat from the body cavity.

  3. Rub the duck inside and out with Chinese five-spice powder and salt. Make sure to coat it well.

  4. Place the duck on a rack in a roasting pan, breast side up.

  5. Roast the duck in the preheated oven for about 1 1/2 to 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (75°C).

  6. While the duck is roasting, prepare the glaze by combining honey, soy sauce, rice vinegar, ginger, and garlic in a small saucepan. Heat over low heat until the mixture thickens.

  7. Brush the glaze over the duck every 15 minutes during the last 30 minutes of roasting.

  8. Remove the duck from the oven and let it rest for 10 minutes before carving.

  9. Garnish with spring onions and serve hot.
