How To Make Chicken, mozzarella & pesto filo parcels

Ingredients
- 4 chicken breasts
- 8 sheets of filo pastry
- 1 cup of mozzarella cheese, shredded
- 1/2 cup of pesto
- Salt and pepper, to taste
- Olive oil, for brushing
Instructions

Preheat the oven to 375°F (190°C).

Season the chicken breasts with salt and pepper.

In a bowl, mix the mozzarella cheese and pesto together.

Lay one sheet of filo pastry on a clean surface and brush with olive oil. Place another sheet on top and brush with olive oil as well. Repeat this process with the remaining filo pastry.

Cut each filo pastry stack into squares or rectangles.

Place a chicken breast on each filo pastry square and spoon some of the mozzarella and pesto mixture on top.

Fold the filo pastry over the chicken and seal the edges by pressing them together.

Brush the top of each parcel with olive oil.

Place the parcels on a baking sheet and bake in the preheated oven for 25 minutes or until the chicken is cooked through and the pastry is golden brown.
