Ingredients

  • 4 duck breasts
  • 2 tsp Chinese five-spice powder
  • 1 tsp paprika
  • Salt, to taste
  • 4 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped peanuts
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 tbsp vegetable oil, for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Score the skin of the duck breasts and season with Chinese five-spice powder, paprika, and salt. Rub the spices into the meat.

  3. Heat a large oven-safe skillet over medium-high heat and add the vegetable oil. Place the duck breasts, skin side down, and cook for 4-5 minutes until the skin is crispy and golden brown. Flip the breasts and cook for another 2-3 minutes.

  4. Transfer the skillet to the preheated oven and roast the duck for 10-12 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let the duck rest for 5 minutes before slicing.

  5. In a large salad bowl, combine the mixed greens, cucumber, carrot, red bell pepper, cilantro, mint leaves, and peanuts.

  6. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, grated ginger, and minced garlic.

  7. Slice the duck breasts thinly and add them to the salad bowl. Pour the dressing over the salad and toss gently to combine.

  8. Serve the Chinese Spiced Duck Salad immediately, garnished with extra chopped peanuts, if desired.
