How To Make Peking Duck

Ingredients

  • 1 whole duck (about 4-5 lbs)
  • 2 tbsp of Chinese five spice powder
  • 2 tbsp of honey
  • 2 tbsp of soy sauce
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • Hoisin sauce, for serving
  • Pancakes, for serving
  • Scallions, thinly sliced for garnish

Instructions

  1. Preheat oven to 300°F (150°C).

  2. Rinse the duck under cold water and pat dry with paper towels.

  3. In a small bowl, mix together the Chinese five spice powder, honey, soy sauce, garlic, ginger, salt, and pepper. Rub the mixture all over the duck, inside and out.

  4. Place the duck on a wire rack set inside a roasting pan. Roast for 2 hours, then increase the oven temperature to 425°F (220°C) and roast for another 30 minutes, or until the skin is crispy and browned.

  5. Remove the duck from the oven and let it rest for 10 minutes before carving.

  6. Serve the Peking duck with hoisin sauce, pancakes, and sliced scallions.
