How To Make Warm Salad of Chicken Livers, Smoked Paprika & Sherry

Ingredients
- 1 lb chicken livers
- 1 tbsp smoked paprika
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 1/4 cup sherry
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
Instructions

Rinse the chicken livers and pat dry with paper towels. Season with smoked paprika, salt, and pepper.

Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Add the chicken livers to the skillet and cook for 3-4 minutes per side until browned and cooked through.

Remove the chicken livers from the skillet and set aside. Add sherry to the skillet and cook for 2 minutes, scraping up any browned bits from the bottom of the pan.

In a large bowl, toss together the salad greens, cherry tomatoes, red onion, feta cheese, and fresh parsley.

Divide the salad mixture among 4 plates. Top each plate with the cooked chicken livers.

Drizzle the sherry sauce from the skillet over the salads.
