Ingredients

  • 1 lb chicken livers
  • 1 tbsp smoked paprika
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1/4 cup sherry
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Rinse the chicken livers and pat dry with paper towels. Season with smoked paprika, salt, and pepper.

  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

  3. Add the chicken livers to the skillet and cook for 3-4 minutes per side until browned and cooked through.

  4. Remove the chicken livers from the skillet and set aside. Add sherry to the skillet and cook for 2 minutes, scraping up any browned bits from the bottom of the pan.

  5. In a large bowl, toss together the salad greens, cherry tomatoes, red onion, feta cheese, and fresh parsley.

  6. Divide the salad mixture among 4 plates. Top each plate with the cooked chicken livers.

  7. Drizzle the sherry sauce from the skillet over the salads.

  8. Serve warm and enjoy!
