  • 1 lb boneless, skinless chicken breasts, cut into chunks
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp honey
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1/2 cup coconut milk
  • 1/4 cup chopped peanuts
  • 2 green onions, sliced
  • Cooked rice, for serving

Instructions

  1. In a small bowl, mix together the peanut butter, soy sauce, lime juice, honey, garlic, ginger, and coconut milk until well combined.

  2. Heat a large skillet over medium heat and add the chicken. Cook until no longer pink in the center, about 8-10 minutes.

  3. Pour the peanut sauce over the chicken in the skillet, stirring to coat evenly. Simmer for 5 minutes, until the sauce thickens slightly.

  4. Serve the Thai peanut chicken over cooked rice. Garnish with chopped peanuts and sliced green onions.
