How To Make Thai Peanut Chicken Recipe

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into chunks
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp honey
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1/2 cup coconut milk
- 1/4 cup chopped peanuts
- 2 green onions, sliced
- Cooked rice, for serving

In a small bowl, mix together the peanut butter, soy sauce, lime juice, honey, garlic, ginger, and coconut milk until well combined.

Heat a large skillet over medium heat and add the chicken. Cook until no longer pink in the center, about 8-10 minutes.

Pour the peanut sauce over the chicken in the skillet, stirring to coat evenly. Simmer for 5 minutes, until the sauce thickens slightly.
