How To Make Shredded Duck, Watercress & Orange Salad

Ingredients
- 2 duck breasts
- 4 cups of watercress
- 2 oranges, peeled and segmented
- 1/4 cup of sliced red onions
- 1/4 cup of chopped roasted almonds
- 1/4 cup of dried cranberries
- Salt and pepper to taste
- dressing:
- 2 tablespoons of orange juice
- 1 tablespoon of honey
- 1 tablespoon of Dijon mustard
- 2 tablespoons of olive oil
Instructions

Preheat the oven to 350°F (175°C).

Season the duck breasts with salt and pepper.

Place the duck breasts on a baking sheet and roast for 1.5 to 2 hours, or until the meat is tender and easily shredded.

Remove the duck from the oven and let it cool slightly. Shred the meat using two forks.

In a large bowl, combine the shredded duck, watercress, orange segments, red onions, roasted almonds, and dried cranberries.

In a separate small bowl, whisk together the orange juice, honey, Dijon mustard, and olive oil to make the dressing.

Pour the dressing over the salad and toss to combine.
