Serves:

Ingredients

  • 2 duck breasts
  • 4 cups of watercress
  • 2 oranges, peeled and segmented
  • 1/4 cup of sliced red onions
  • 1/4 cup of chopped roasted almonds
  • 1/4 cup of dried cranberries
  • Salt and pepper to taste
  • dressing:
  • 2 tablespoons of orange juice
  • 1 tablespoon of honey
  • 1 tablespoon of Dijon mustard
  • 2 tablespoons of olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Season the duck breasts with salt and pepper.

  3. Place the duck breasts on a baking sheet and roast for 1.5 to 2 hours, or until the meat is tender and easily shredded.

  4. Remove the duck from the oven and let it cool slightly. Shred the meat using two forks.

  5. In a large bowl, combine the shredded duck, watercress, orange segments, red onions, roasted almonds, and dried cranberries.

  6. In a separate small bowl, whisk together the orange juice, honey, Dijon mustard, and olive oil to make the dressing.

  7. Pour the dressing over the salad and toss to combine.

  8. Serve the salad chilled and enjoy!
