Ingredients

  • 6 slices of bacon
  • 1 cup chestnuts, cooked and chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch round cake pan.

  2. Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. Crumble or chop into small pieces.

  3. In a mixing bowl, combine the flour, baking powder, salt, and black pepper.

  4. In another bowl, whisk together the milk and eggs. Add the chopped chestnuts and crumbled bacon.

  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  6. Pour the batter into the prepared cake pan and sprinkle the grated Parmesan cheese on top.

  7. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool for a few minutes before serving. Slice and enjoy!
