How To Make Buttermilk Caramel Puddings

Ingredients
- 1 cup of granulated sugar
- 1/4 cup of water
- 2 cups of buttermilk
- 1/2 cup of heavy cream
- 4 large eggs
- 1 teaspoon of vanilla extract
- Pinch of salt
Instructions

Preheat the oven to 325°F (163°C). Place four ramekins in a baking dish.

In a medium saucepan, combine the sugar and water. Cook over medium heat, stirring constantly, until the sugar dissolves and turns into a golden caramel color.

Remove the saucepan from heat and slowly add the buttermilk, stirring continuously. Be careful as the mixture will bubble up.

In a separate bowl, whisk together the heavy cream, eggs, vanilla extract, and salt. Gradually pour the buttermilk caramel mixture into the egg mixture, stirring constantly.

Pour the pudding mixture into the ramekins. Place the baking dish in the oven and pour enough hot water into the dish to reach halfway up the sides of the ramekins.

Bake for 40-45 minutes, or until the puddings are set but still slightly jiggly in the center.

Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours before serving.
