How To Make Roasted Corn with Cilantro Butter

This sweet roasted corn is made tastier with a butter-based sauce mixed with the earthy and minty cilantro and smoky spice from Chipotle peppers.

Total: 45 minutes



For Cilantro Butter:

  • 2tbsplight butter,at room temperature
  • 1tbspfresh cilantro,chopped
  • tspground chipotle pepper
  • tspcumin
  • 1pinchsalt

For Corn:

  • 6ears of corn,husks on


Cilantro Butter:

  1. Combine all the ingredients to make butter. Set aside in a ramekin.


  1. Preheat oven to 350 degrees F. When hot, place corn in the middle rack and bake for 30 minutes.

  2. Remove corn from the oven and set aside for 5 minutes.

  3. Carefully remove husks and silks from the corn and serve each with 2 teaspoons of cilantro butter. Enjoy!
