  • 1 cup cooked flaky white fish, finely chopped
  • 1 cup sweet corn kernels
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped scallions
  • 1 egg
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine fish, corn, breadcrumbs, scallions, egg, parsley, salt, and pepper. Mix well.

  2. Form the mixture into 8 patties.

  3. Heat olive oil in a skillet over medium-high heat.

  4. Cook the patties for about 3-4 minutes on each side until golden brown and crispy.

  5. Serve hot with a side of tartar sauce or ketchup.
