How To Make Italian Sausage Stew with Rosemary Garlic Mash

Ingredients
- 4 Italian sausages
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 can (400g) diced tomatoes
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 4 potatoes, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk
- 2 cloves of garlic, minced
- 1 tbsp fresh rosemary, chopped
Instructions

In a large pot, brown the Italian sausages over medium heat. Remove from the pot and set aside.

In the same pot, sauté the diced onion and minced garlic until fragrant.

Add the sliced bell peppers and cook until slightly softened.

Cut the Italian sausages into bite-sized pieces and return them to the pot.

Stir in the diced tomatoes, chicken broth, dried oregano, dried basil, salt, and pepper. Bring to a simmer and let cook for 30 minutes.

In the meantime, boil the potatoes in a separate pot until fork-tender. Drain and return to the pot.

Mash the potatoes with butter, milk, minced garlic, and chopped rosemary until smooth and creamy.

Serve the Italian sausage stew over a scoop of the rosemary garlic mash.
