How To Make Sausage & Butter Bean Casserole

Ingredients

  • 8 sausages
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 can of butter beans, drained and rinsed
  • 1 can of chopped tomatoes
  • 1 cup chicken or vegetable broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large ovenproof skillet or casserole dish, brown the sausages over medium heat until cooked through. Remove the sausages and set aside.

  3. In the same skillet, add the onion, garlic, carrots, and celery. Cook for 5 minutes, or until the vegetables are softened.

  4. Add the butter beans, chopped tomatoes, broth, dried thyme, paprika, salt, and pepper to the skillet. Stir well to combine.

  5. Return the sausages to the skillet and nestle them into the bean mixture.

  6. Cover the skillet with a lid or foil and transfer it to the preheated oven. Bake for 1 hour, or until the sausages are tender and the flavors have melded together.

  7. Serve hot, garnished with fresh parsley.
