Ingredients
- 1 lb lamb loin, sliced
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 cups watercress
- 1 cup cherry tomatoes, halved
- 1/4 cup balsamic glaze
- 1/4 cup shaved Parmesan cheese
Instructions

Preheat a grill or skillet over high heat.

Rub the lamb slices with olive oil and season with salt and pepper.

Cook the lamb for 4-5 minutes per side for medium-rare, or until desired doneness.

Remove the lamb from the heat and let it rest for 5 minutes.

In a large bowl, combine watercress and cherry tomatoes.

Drizzle with balsamic glaze and toss to coat.

Slice the lamb and arrange it on a serving platter.

Spoon the watercress and tomato mixture over the lamb.

Sprinkle with shaved Parmesan cheese.
