Ingredients

  • 1 lb lamb loin, sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 cups watercress
  • 1 cup cherry tomatoes, halved
  • 1/4 cup balsamic glaze
  • 1/4 cup shaved Parmesan cheese

Instructions

  1. Preheat a grill or skillet over high heat.

  2. Rub the lamb slices with olive oil and season with salt and pepper.

  3. Cook the lamb for 4-5 minutes per side for medium-rare, or until desired doneness.

  4. Remove the lamb from the heat and let it rest for 5 minutes.

  5. In a large bowl, combine watercress and cherry tomatoes.

  6. Drizzle with balsamic glaze and toss to coat.

  7. Slice the lamb and arrange it on a serving platter.

  8. Spoon the watercress and tomato mixture over the lamb.

  9. Sprinkle with shaved Parmesan cheese.

  10. Serve immediately.
