Ingredients

  • 4 chicken breasts, boneless and skinless
  • 200g ham, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 250ml chicken stock
  • 250ml milk
  • 2 tbsp all-purpose flour
  • 2 tbsp wholegrain mustard
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • For the dumplings:
  • 200g self-raising flour
  • 100g butter, cold and diced
  • 1 tbsp wholegrain mustard
  • A handful of fresh parsley, chopped
  • Salt and pepper to taste
  • 4-6 tbsp cold water

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large ovenproof casserole dish, heat some oil and brown the chicken breasts on both sides. Remove and set aside.

  3. In the same dish, sauté the onion and garlic until softened. Add the carrots and celery, and cook for another 5 minutes.

  4. Stir in the flour, thyme, and mustard, and cook for a minute. Gradually add the chicken stock and milk, stirring continuously until thickened.

  5. Return the chicken to the dish along with the diced ham. Season with salt and pepper. Cover and place in the oven for 1 hour.

  6. Meanwhile, prepare the dumplings. In a bowl, mix the self-raising flour, butter, mustard, parsley, salt, and pepper until it resembles breadcrumbs. Gradually add cold water, a tablespoon at a time, until the mixture comes together as a soft dough.

  7. After 1 hour of cooking, remove the casserole from the oven and increase the temperature to 200°C (400°F). Drop spoonfuls of the dumpling mixture onto the surface of the casserole.

  8. Return the dish to the oven, uncovered, and cook for another 25-30 minutes, or until the dumplings are golden and cooked through.

  9. Serve the chicken and ham casserole with mustardy dumplings hot, garnished with fresh parsley.
