Ingredients

  • 1 cup long-grain white rice
  • 1 cup dried red kidney beans, soaked overnight
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 cups water

Instructions

  1. Drain and rinse the soaked kidney beans.

  2. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.

  3. Add the drained beans to the pot and cook for 5 minutes, stirring occasionally.

  4. Add the rice, thyme, paprika, black pepper, and salt to the pot. Stir everything together until well combined.

  5. Pour in the water and bring the mixture to a boil.

  6. Reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes or until the rice is cooked and the beans are tender.

  7. Once cooked, fluff the rice with a fork and let it sit for a few minutes before serving.
