How To Make Arnaud’s Red Beans and Rice
A classic Creole dish made with red beans, smoked sausage, and rice. Perfect for a cozy dinner at home.
Serves:
Ingredients
- 1 lb. of dried red kidney beans
- 1 lb. of smoked sausage
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 stalks of celery, chopped
- 4 cloves of garlic, minced
- 2 bay leaves
- 1 tsp. of dried thyme
- 1 tsp. of smoked paprika
- 1 tsp. of Cajun seasoning
- Salt and pepper to taste
- Cooked white rice for serving
Instructions

Rinse the red beans and soak them in water overnight.

In a large pot, sauté the smoked sausage over medium heat until browned.

Add the chopped onion, green bell pepper, celery, and minced garlic to the pot. Cook until the vegetables are tender.

Drain the soaked red beans and add them to the pot.

Add enough water to cover the beans by about 2 inches.

Add the bay leaves, dried thyme, smoked paprika, Cajun seasoning, salt, and pepper to taste.

Bring the pot to a boil, then reduce the heat and let the beans simmer for about 1 1/2 to 2 hours, or until the beans are tender and the sauce has thickened.

Serve the red beans over a bed of cooked white rice.
