Ingredients

  • 1 pound dried red kidney beans
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust according to spice preference)
  • 1 pound smoked sausage, sliced
  • 4 cups chicken or vegetable broth
  • 3 cups cooked rice
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

  1. Rinse the red kidney beans under cold water and soak them overnight in a large pot filled with water. Drain well before using.

  2. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion, bell pepper, celery, and garlic. Cook until the vegetables are softened and lightly browned, about 5-7 minutes.

  3. Add the bay leaf, dried thyme, dried oregano, paprika, and cayenne pepper to the pot. Stir well to coat the vegetables in the spices.

  4. Add the sliced smoked sausage to the pot and cook for an additional 5 minutes, allowing the flavors to meld together.

  5. Add the soaked and drained red kidney beans to the pot, along with the chicken or vegetable broth. Stir well and bring the mixture to a boil.

  6. Once boiling, reduce the heat to low and simmer for about 2 hours, or until the beans are tender and the flavors have developed.

  7. While the beans are cooking, prepare the rice according to package instructions.

  8. Season the red beans and sausage mixture with salt and pepper to taste.

  9. Serve the red beans over a bed of cooked rice. Garnish with chopped green onions.
