Ingredients

  • 1 pound dried red kidney beans
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 1 pound smoked sausage, sliced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • 4 cups cooked white rice
  • Green onions, chopped (for garnish)

Instructions

  1. Rinse the dried beans and soak them overnight in a large bowl of water. Drain and rinse before using.

  2. In a large pot, heat some oil over medium heat. Add the chopped onion, bell pepper, celery, and minced garlic. Cook until the vegetables soften, about 5 minutes.

  3. Add the sliced smoked sausage and cook until it starts to brown, about 5 minutes.

  4. Add the drained beans, bay leaves, dried thyme, dried oregano, and cayenne pepper (if using) to the pot. Stir well to combine.

  5. Pour enough water into the pot to cover the beans by about 2 inches. Bring to a boil, then reduce the heat to low and simmer, covered, for 1.5 to 2 hours or until the beans are tender and creamy. Stir occasionally and add more water if needed to keep the beans covered.

  6. Season with salt and pepper to taste.

  7. Serve the Louisiana Red Beans over cooked white rice. Garnish with chopped green onions.
