Ingredients
- 4 bratwurst sausages
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 red bell pepper, diced
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups baby spinach
Instructions

In a large pot, heat the olive oil over medium heat. Add the bratwurst sausages and cook until browned on all sides. Remove the sausages from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.

Add the carrots, celery, and red bell pepper to the pot. Stir and cook for 5 minutes, until the vegetables begin to soften.

Slice the bratwurst sausages into bite-sized pieces and return them to the pot.

Pour in the chicken broth and diced tomatoes. Add the dried thyme and oregano. Season with salt and pepper to taste.

Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.

Just before serving, stir in the baby spinach and allow it to wilt for a few minutes.
