- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup grated carrots
- 1/2 cup chopped apples
- 1/4 cup raisins
- 1/4 cup chopped walnuts
Instructions

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine flour, oats, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Stir in grated carrots, chopped apples, raisins, and chopped walnuts.

Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.

Bake for 10 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
