Ingredients
- 2 cups of white rice
- 1 cup of gandules (pigeon peas), drained and rinsed
- 1 tablespoon of vegetable oil
- 1/2 cup of diced onion
- 3 cloves of garlic, minced
- 1 green bell pepper, diced
- 1 teaspoon of ground cumin
- 1 teaspoon of oregano
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 3 cups of chicken or vegetable broth
- 2 tablespoons of chopped fresh cilantro
Instructions

Rinse the rice under cold water until the water runs clear. Set aside.

In a large pot, heat the vegetable oil over medium heat. Add the diced onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened, about 5 minutes.

Add the rice, cumin, oregano, salt, and black pepper to the pot. Stir well to coat the rice in the spices.

Pour in the broth and add the gandules. Bring to a boil, then reduce the heat to low and cover the pot. Let simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.

Remove from heat and let the rice sit, covered, for another 5 minutes.

Fluff the rice with a fork and stir in the chopped cilantro. Serve hot and enjoy!
