How To Make Calamari Garlic Lemon Risotto

  • 2 tbsp. olive oil
  • 6 garlic cloves (minced)
  • ½ onion (diced)
  • 1 ¾ cup rice (preferably arborio)
  • ½ cup dry white wine
  • 1 tbsp. lemon zest
  • 3 cups water
  • 2 cups vegetable broth
  • 1 cup calamari (thinly sliced)
  • ¼ cup parmesan cheese
  • 2 tbsp. lemon juice
  1. In a large skillet, heat oil and sauté garlic and onion until softened.
  2. Add rice, stir to coat, and pour in wine and lemon zest.
  3. In a saucepan, bring water and broth to a boil.
  4. Pour broth mixture over rice in portions, stirring to allow the broth to absorb.
  5. Stir in calamari, parmesan, and lemon juice.

  6. Cook for 5 minutes and serve.
