Ingredients

  • 8 oz smoked salmon, thinly sliced
  • 12 oz spaghetti
  • 2 eggs
  • 1 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. In a large bowl, whisk together the eggs, Parmesan cheese, heavy cream, garlic, and parsley.

  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the smoked salmon and cook for 3-4 minutes, until heated through.

  4. Add the cooked spaghetti to the skillet with the salmon and toss to combine.

  5. Remove the skillet from heat and pour in the egg mixture, tossing constantly to coat the pasta evenly.

  6. Season with salt and pepper to taste.

  7. Serve immediately, garnished with additional Parmesan cheese and parsley if desired.
