How To Make Healthy Chicken Stir-Fry

Ingredients
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 2 green onions, sliced
- 1 tbsp cornstarch
- 1/4 cup chicken broth
- 1 tbsp vegetable oil
- Salt and pepper, to taste

In a small bowl, combine soy sauce, sesame oil, garlic, and ginger. Marinate the chicken in this mixture for 10 minutes.

Heat vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and cook until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the bell peppers, broccoli, snap peas, and carrot. Stir-fry for 3-4 minutes until vegetables are crisp-tender.

In a separate bowl, whisk cornstarch and chicken broth until smooth. Pour the mixture into the skillet with vegetables. Cook for an additional 1-2 minutes until the sauce thickens.

Return the cooked chicken to the skillet and toss everything together. Cook for another minute to heat through.

Season with salt and pepper to taste. Serve hot, garnished with sliced green onions.
