How To Make Lemon & Elderflower Celebration Cake
A light and refreshing cake with the perfect balance of lemon and elderflower flavors.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1/2 cup milk
- 1/4 cup elderflower cordial
- 1 cup powdered sugar
- Juice of 1 lemon
Instructions

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, then stir in the vanilla extract and lemon zest.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk.

Fold in the elderflower cordial until well combined.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

In a small bowl, whisk together the powdered sugar and lemon juice to make a glaze.

Drizzle the glaze over the cooled cake.

Garnish with additional lemon zest, if desired.
