Ingredients

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup chopped green onions
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, pour boiling water over the bulgur wheat. Cover and let it sit for about 10 minutes or until all the water is absorbed.

  2. Fluff the bulgur wheat with a fork and let it cool.

  3. Add the chopped parsley, mint, tomatoes, cucumber, and green onions to the bowl with the cooled bulgur wheat.

  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  5. Serve chilled or at room temperature.
