How To Make Bulgur Wheat Tabbouleh

Ingredients
- 1 cup bulgur wheat
- 2 cups boiling water
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/4 cup chopped green onions
- 1/4 cup lemon juice
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a large bowl, pour boiling water over the bulgur wheat. Cover and let it sit for about 10 minutes or until all the water is absorbed.

Fluff the bulgur wheat with a fork and let it cool.

Add the chopped parsley, mint, tomatoes, cucumber, and green onions to the bowl with the cooled bulgur wheat.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve chilled or at room temperature.
