How To Make Slow-roasted Rib of Beef

Ingredients
- 3 lbs rib of beef
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions

Preheat the oven to 300°F (150°C).

Rub the rib of beef with olive oil, minced garlic, fresh rosemary, fresh thyme, salt, and pepper.

Place the rib of beef on a rack in a roasting pan.

Roast the beef for 2 hours 30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Remove the beef from the oven and let it rest for 15 minutes before slicing.

Slice the beef into thick slices and serve.
