
How To Make Shrimp Pasta Salad with Cucumber and Dill
Lightened up with a bright lemon and mayo dressing, this shrimp pasta salad with cucumber is a great potluck dish for all occasions.

Ingredients
- coarse salt and ground pepper
- ¾lblarge shell pasta
- 1lbshrimp,large peeled and deveined
- 1English cucumber
- ½cuproughly dill,chopped
- 2tbsplight mayonnaise
- 2tbspolive oil
- 2tbspfresh lemon juice
- 1tspdijon mustard
Instructions

In a large pot of boiling salted water, cook pasta until al dente. Add shrimp, and cook just until opaque throughout. Drain, and rinse with cold water to stop the cooking. Drain again.

Transfer pasta mixture to a bowl; toss with cucumber and dill. In another bowl, whisk together mayonnaise, oil, lemon juice, and Dijon; season with salt and pepper.

Add dressing to pasta mixture, and toss to combine.
