Meaty roast pork tenderloin is served with tender and nutritious acorn squash and flavored with a touch of hoisin sauce to give it a slight Asian touch.

Ingredients

  • 1acorn squash
  • 8clovegarlic
  • ½tsprosemary,dried
  • coarse salt and ground pepper
  • 2pork tenderloins
  • 4tspolive oil
  • 2tbsphoisin sauce

Instructions

  1. Preheat oven to 375 degrees F. Scatter squash and garlic in a large roasting pan. Mix rosemary, salt, and pepper; rub into pork. Place in pan with vegetables; drizzle with oil.

  2. Roast 25 minutes. Brush pork with hoisin. Continue roasting, about 15 minutes, until pork reaches an internal temperature of 140 degrees F.

  3. Let meat stand 5 minutes before slicing. Serve with squash, garlic, and any pan juices.
