How To Make Linguine with Roasted Red Pepper Sauce Recipe
Delicious linguine pasta tossed in a sweet and spicy roasted red pepper sauce.

Ingredients
- 16 oz linguine pasta
- 2 red bell peppers, roasted and peeled
- 1 onion, chopped
- 3 garlic cloves, minced
- 1/4 tsp red pepper flakes
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 2 tbsp olive oil
- Chopped parsley, to garnish
Instructions
- 
Cook the pasta in boiling salted water until al dente. Reserve 1/2 cup of pasta water in a measuring jug and drain the pasta. 
- 
In a blender, add the roasted peppers, onion, garlic, red pepper flakes, and 1/2 cup of reserved pasta water. Puree until smooth. 
- 
Heat the olive oil in a large pan over medium heat. Add the pepper puree and cook for 3-4 minutes until heated through. 
- 
Stir in the heavy cream and grated Parmesan cheese. Season with salt and pepper to taste. 
- 
Add the cooked pasta to the sauce and toss until well coated. Serve hot, garnished with chopped parsley.
