How To Make Linguine with Roasted Red Pepper Sauce Recipe

Delicious linguine pasta tossed in a sweet and spicy roasted red pepper sauce.

Ingredients

  • 16 oz linguine pasta
  • 2 red bell peppers, roasted and peeled
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Chopped parsley, to garnish

Instructions

  1. Cook the pasta in boiling salted water until al dente. Reserve 1/2 cup of pasta water in a measuring jug and drain the pasta.

  2. In a blender, add the roasted peppers, onion, garlic, red pepper flakes, and 1/2 cup of reserved pasta water. Puree until smooth.

  3. Heat the olive oil in a large pan over medium heat. Add the pepper puree and cook for 3-4 minutes until heated through.

  4. Stir in the heavy cream and grated Parmesan cheese. Season with salt and pepper to taste.

  5. Add the cooked pasta to the sauce and toss until well coated. Serve hot, garnished with chopped parsley.
