A delicious and healthy pasta dish filled with roasted veggies and bow tie pasta, perfect for any day of the week!

Ingredients

  • 1 lb bow tie pasta
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red onion, sliced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, toss the sliced bell peppers, zucchini, yellow squash, red onion, garlic, olive oil, salt, and black pepper together.

  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes or until tender and slightly browned.

  4. Meanwhile, cook the bow tie pasta according to package instructions.

  5. Once the pasta is cooked, reserve 1 cup of pasta water and drain the remaining water.

  6. In a large bowl, toss the roasted vegetables with the cooked pasta.

  7. If the pasta seems dry, add some of the reserved pasta water to coat the pasta.

  8. Top with grated Parmesan cheese before serving.
