How To Make Gnocchi with Pancetta, Spinach & Parmesan Cream

Ingredients
- 1 lb (450g) gnocchi
- 4 oz (115g) pancetta, diced
- 2 cloves garlic, minced
- 4 cups (120g) fresh spinach
- 1 cup (240ml) heavy cream
- 1 cup (100g) grated Parmesan cheese
- Salt and pepper, to taste
Instructions

Cook the gnocchi according to package instructions. Drain and set aside.

In a large skillet, cook the pancetta over medium heat until crispy. Remove with a slotted spoon and set aside.

In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.

Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside.

In a small saucepan, heat the cream over medium-low heat until warmed through.

Slowly whisk in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

Add the cooked gnocchi, pancetta, and spinach to the skillet with the Parmesan cream sauce. Toss to coat evenly.

Serve the gnocchi with pancetta, spinach, and Parmesan cream immediately, garnished with extra grated Parmesan if desired.
