How To Make Asparagus, Broad Bean & Smoked Salmon Pasta

Ingredients
- 250g pasta
- 200g asparagus, trimmed and cut into bite-sized pieces
- 150g broad beans, shelled
- 200g smoked salmon, flaked
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1/2 cup vegetable broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large pan, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Add the asparagus and broad beans to the pan and sauté for 5 minutes until they start to soften.

Pour in the vegetable broth and bring to a simmer. Cook for another 5 minutes until the vegetables are tender.

Add the cooked pasta and smoked salmon to the pan and toss to combine. Cook for an additional 2 minutes to heat through.

Remove the pan from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

Serve the pasta hot, garnished with extra Parmesan cheese if desired.
