How To Make Pappardelle Broad Bean Carbonara

Ingredients
- 8 ounces pappardelle noodles
- 1 cup broad beans, shelled
- 4 slices bacon, diced
- 2 cloves garlic, minced
- 2 eggs
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Cook the pappardelle noodles according to package instructions. Drain and set aside.

In a large skillet, cook the diced bacon until crispy. Remove from the skillet and set aside on a paper towel-lined plate.

In the same skillet, sauté the minced garlic until fragrant. Add the broad beans and cook for 2-3 minutes, until slightly softened.

In a small bowl, whisk together the eggs and Parmesan cheese until well combined.

Transfer the cooked noodles to the skillet with the broad beans. Pour the egg mixture over the noodles and toss until well coated. Cook for another 2-3 minutes, until the sauce thickens slightly.

Remove the skillet from heat and stir in the cooked bacon. Season with salt and pepper to taste.
