How To Make Herby Chickpea Balls with Tomato Sauce
Delicious vegetarian chickpea balls flavored with herbs, served with a tangy tomato sauce.

Ingredients
- 2 cans (400g each) chickpeas, drained and rinsed
- 1 small onion, finely chopped
- 3 cloves of garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh basil, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 2 tablespoons olive oil, for frying
- 1 can (400g) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste

In a large bowl, mash the chickpeas with a fork. Add the onion, garlic, fresh herbs, breadcrumbs, Parmesan cheese, and beaten egg. Mix well to combine.

Shape the mixture into golf ball-sized balls and place them on a baking sheet. Refrigerate for 15 minutes to firm up.

Heat olive oil in a large skillet over medium heat. Add the chickpea balls and cook for about 5 minutes, turning occasionally, until they are golden brown on all sides. Remove from the skillet and set aside.

In the same skillet, add the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Stir well and bring to a simmer. Cook for 10 minutes, stirring occasionally.

Return the chickpea balls to the skillet with the tomato sauce. Simmer for another 5 minutes, allowing the flavors to meld together.

Serve the herby chickpea balls with tomato sauce over cooked pasta or with crusty bread.
