  • 1/2 cup diced bell peppers
  • 1/2 cup diced tomatoes
  • 1/2 cup diced ham
  • 1/4 cup shredded low-fat cheddar cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a bowl, whisk together eggs, salt, and black pepper.

  2. Heat a non-stick skillet over medium heat and spray with cooking spray.

  3. Pour the egg mixture into the skillet and let it cook for 2 minutes.

  4. Sprinkle the bell peppers, tomatoes, ham, and cheese evenly over one half of the omelette.

  5. Using a spatula, fold the other half of the omelette over the filling.

  6. Cook for another 2 minutes until the cheese is melted and the omelette is cooked through.

  7. Sprinkle with chopped parsley before serving.
