Ingredients

  • 1 cup broad beans
  • 4 slices of baguette
  • 1/4 cup crumbled feta cheese
  • 8 asparagus spears
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tbsp fresh herbs (such as basil, parsley, or chives), chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Boil the broad beans in salted water for 3-4 minutes, then drain and rinse with cold water.

  3. Remove the outer skins from the broad beans.

  4. Brush the baguette slices with olive oil and toast in the oven for 5-7 minutes, until crispy.

  5. In a small bowl, mix together the minced garlic, olive oil, fresh herbs, salt, and pepper.

  6. Heat a pan over medium heat and add the asparagus spears. Cook for 4-5 minutes, until bright green and slightly tender.

  7. Spread the herbed olive oil mixture onto the toasted baguette slices.

  8. Top each crostini with a spoonful of broad beans, crumbled feta cheese, and a cooked asparagus spear.

  9. Serve immediately.
