  • 2 cloves of garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 4 cups vegetable broth
  • 2 carrots, diced
  • 1 cup cauliflower florets
  • 1 cup green peas
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat oil in a pot and sauté the onion until translucent.

  2. Add garlic and ginger, cook for another minute.

  3. Stir in cumin powder, coriander powder, turmeric powder, and red chili powder.

  4. Add vegetable broth and bring to a boil.

  5. Add carrots, cauliflower, and green peas. Simmer for 15-20 minutes until vegetables are tender.

  6. Season with salt.

  7. Serve hot, garnished with fresh cilantro.
